17 Tomato Basil Mozzarella Salad * *
INGREDIENTS
- 1/2 cup of cherry tomatoes
- 1 cup of baby spinach leaves
- 1/2-1 cup of fresh mozzarella balls
- 1 Tbsp of basil, washed, chopped
- A pinch of salt
- A pinch of garlic powder (optional)
- 2 tsps of olive oil
- A pinch of black pepper
NOTE
This dish is commonly made along the Mediterranean coast (in countries such as Italy, Spain, etc.) as a side dish called Tapas. Mediterranean food is considered the most healthy and balanced cuisine. If you do not eat cheese, you can substitute boiled pigeon eggs for the mozzarella.

Chop up the basil leaves. Then place the chopped leaves in a blender and blend until they are a paste-like consistency. Then add salt, garlic powder, olive oil, and black pepper. Blend for another few seconds until mixed thoroughly. | |

Add the cherry tomatoes and mozzarella to the basil mixture. Stir until evenly mixed. Next add the spinach leaves and stir again. Transfer to a plate and serve immediately. |

材料
- 小蕃茄:1/2 杯
- 菠菜葉:1 杯,BABY 菠菜葉,做沙拉專用的
- MOZZARELLA:1/2-1 杯
- BASIL:1 湯匙,九層塔葉子洗淨切碎,或攪碎
- 鹽:少
- 大蒜粉:少許,不吃蒜的人可以不放
- 橄欖油:2 茶匙,做沙拉專用的
- 胡椒粉:少許,黑胡椒粉

這是義大利、西班牙等地中海沿岸常做的小菜 TAPAS,因為出產橄欖油和蕃茄,再加上葡萄酒,被評為最健康均衡的菜肴。如果不吃 CHEESE 的人,可把 MOZZARELLA 改為鴿子蛋,效果也不錯。我用的 BASIL 醬是自己現做的,
做 法

把 BASIL 葉切碎,再用攪拌器打成醬,然後加入鹽、蒜粉、橄欖油、黑胡椒粉,拌均勻備用 | |
