Quinoa is one of the earliest and most primitive grains on Earth. It contains a comprehensive variety of nutrition, and has even been used as meal replacements for astronauts in space. Originally from South America, quinoa is a supergrain with super flavor.


  • 2 cups of quinoa, cooked
  • 1/3 cup of black beans, cooked
  • 1/2 cup of blanched corn, cooked
  • 1/4 cup of red peppers, small dice (optional: additional 1/2 cup of diced green peppers)
  • 1/4 cup of onions, finely diced
  • 3 Tbsp of extra virgin olive oil
  • A pinch of salt
  • 1 head romaine lettuce


Step 1
Cook the quinoa per directions on package. *Flavor tip: Before simmering, saute quinoa in a pan with a dash of olive oil until slightly toasted, about five minutes.
Step 2
Prepare the beans, corn, peppers, and onions and set aside.
Step 3
Add olive oil to medium size frying pan on medium heat. Add onions, corn, red peppers, and a pinch of salt and saute for one minute.
Step 4
Pour cooked black beans and quinoa into pan, stir.
Step 5
Transfer mix onto cold lettuce wraps, serve.
