3 ITALIAN ASPARAGUS MIXED WITH MUSHROOMS * *

INGREDIENTS

  • 1 bundle of asparagus
  • 1 cup of cherry tomatoes
  • 1 cup of mushrooms (any variety)
  • 1 small handful of small pea shoots (garnish)
  • 1 Tbsp of extra virgin olive oil
  • 1-2 Tbsp of balsamic vinegar
  • A pinch of sugar
  • A pinch of salt

DIRECTIONS

Step 1
Wash then cut asparagus into 5-6 cm long spears.
Step 2
Drop asparagus into boiling water for 30 seconds and remove.
Step 3
Drop mushrooms into boiling water for 30 seconds and remove.
Step 4
Combine mushrooms, asparagus, and tomatoes in a large bowl and slightly stir. Add the olive oil, balsamic, salt, and sugar to taste. Serve as is, or chill in refrigerator then serve.
