3 Italian Asparagus Mixed with Mushrooms * *
3 ITALIAN ASPARAGUS MIXED WITH MUSHROOMS * *
- 1 bundle of asparagus
- 1 cup of cherry tomatoes
- 1 cup of mushrooms (any variety)
- 1 small handful of small pea shoots (garnish)
- 1 Tbsp of extra virgin olive oil
- 1-2 Tbsp of balsamic vinegar
- A pinch of sugar
- A pinch of salt
|Wash then cut asparagus into 5-6 cm long spears.
|Drop asparagus into boiling water for 30 seconds and remove.
|Drop mushrooms into boiling water for 30 seconds and remove.
|Combine mushrooms, asparagus, and tomatoes in a large bowl and slightly stir. Add the olive oil, balsamic, salt, and sugar to taste. Serve as is, or chill in refrigerator then serve.
