7 STEAMED MULTI-GRAIN RICE CAKE WITH RED BEANS

Whole grains have a variety of B vitamins and are full of minerals that fruits and vegetables lack, thus making them a very important part of a vegetarian diet. Multigrain rice in particular has a much lower sugar content than white rice, making it the ideal choice for people with diabetes. *Many stores do not sell multigrain rice with wild black sweet rice, so you must buy the wild sweet rice seperately. This is a very important part of the recipe and the cake cannot be made without the wild sweet rice. At least 10 percent of the rice mix must be wild sweet rice. **This is a 2 part recipe, the rice cake is very versatile. It can be eaten as a snack or light meal, and also made into the red bean dessert. The red bean is optional in this recipe. Red beans take very long to cook, so you may substitute prepared red bean paste instead.

INGREDIENTS

  • 1 cup of multigrain rice, dry (with 10 percent wild black sweet rice)*
  • 2 Tbsp of flax seed powder/flax seed meal/milled flax seed
  • 1/2 cup of dried Chinese red beans (can substitute with prepared red bean paste) **
  • Sugar (or artificial sweetener), to taste

DIRECTIONS

Rice Cake Preparation

Step 1
Use rice cooker to prepare the mixed grain rice.
Step 2
Put the rice into food processor and pulse until it is still thick but thouroughly mixed and consistent (if no food processor you can use a blender with a little bit of water but make sure not to overblend it). Slowly add in flax seed powder as you pulse.
Step 3
Put the rice into molds and steam on high temperature for 15 minutes. Let cool and remove carefully. Enjoy cooled or hot, and can be topped with red bean paste.

Red Bean Preparation

Step 1
Wash the red beans similar to the way you would wash rice.
Step 2
Bring beans to a boil with about 4 cups of water. Boil until the beans are completely soft, stirring occasionally to make sure the beans don’t burn. Add water if needed. This is a long process, and may take 3-5 hours.
Step 3
When beans are completely soft add sugar to your taste. Beans can also be pureed into a paste.
