22 Japanese Style Braised Burdock Root (Gobo) and Potato

INGREDIENTS

  • 1 cup of burdock root (gobo), cut on an angle into 2” pieces, or sliced on an angle
  • 1 cup of potatoes, chopped
  • 1 cup of carrots, chopped
  • 1-2 tsp of soy sauce
  • A dash of oil
  • A pinch of salt
  • A pinch of sugar
  • 1-2 cups of water

DIRECTIONS

Step 1
Heat oil in a pan over medium heat. Stir-fry the burdock root. Then add the potatoes, carrots, and all of the other seasonings and stir-fry.
Step 2
Pour 1-2 cups of water into the pan and cover. Turn the heat down to low and simmer. While it’s cooking, take off the lid and stir the contents to make sure all of the ingredients are coated evenly. Cook until the burdock root becomes soft.
