24 Braised Tofu Balls

INGREDIENTS

  • 1 package of firm tofu
  • 1/4 cup of carrots, diced
  • 1/4 cup of peas
  • 1/4 cup of mushrooms, diced
  • 1/4 cup of corn
  • 1/2 a bunch of mustard greens, washed and cut into 1” lengths
  • A pinch of salt
  • A pinch of sugar
  • A pinch of white pepper
  • A pinch of cornstarch
  • A dash of water
  • 1 tsp of soy sauce

DIRECTIONS

Step 1
In a medium bowl, use your hands to squeeze the water out of the tofu. Pour out the excess water. Crumble the tofu.
Step 2
After blanching the carrots, peas, and corn, squeeze out the excess water.
Step 3
Combine the tofu, carrots, peas, mushrooms, corn, salt, sugar, and white pepper in a large bowl. Using your hands, mold the ingredients into egg-sized balls. Then gently toss one tofu ball at a time back and forth between your hands until the ingredients are packed tightly together. Next lightly coat the outside of each tofu ball with cornstarch.
Step 4
Then place the tofu balls in a steamer in which the water is already boiling. Steam for 3-5 minutes.
Step 5
Heat oil in a pan and stir-fry the mustard greens. Add a little bit of water, soy sauce, salt, and sugar and stir. Then add the steamed tofu balls to the pan. Spoon some of the sauce from the mustard greens over the top of the tofu balls until evenly coated. When everything is finished cooking, take out the mustard greens first and arrange them to cover the bottom of a serving dish or plate. Then pour the thickened remaining liquid and tofu balls on top of the mustard greens and serve.
