31 Japanese Style Egg Burrito

31 Japanese Style Egg Burrito

INGREDIENTS

  • 3 eggs, beaten
  • 1/2 cup of tomatoes, finely diced
  • 3-4 Tbsp of ketchup
  • 1/4 cup of onions, finely diced
  • 1/3 cup of peas, cooked
  • 1/3 cup of carrots, cooked
  • 1-2 cups of cooked white rice
  • A dash of oil
  • A pinch of salt
  • A pinch of sugar

DIRECTIONS

Step 1
Heat a little bit of oil in a pan. Place the onions in the pan and stir-fry. Then add the peas, carrots, and rice. Stir until evenly mixed. Next add the ketchup, salt, and sugar.
Step 2
In a saucepan, heat a little oil. Add the diced tomatoes and cook until they are soft and paste-like in consistency. As the tomatoes cook down, add sugar and salt to taste.
Step 3
Pour the eggs into a pan so they evenly coat the bottom. Make sure you use a pan big enough so that the resulting omelet is thin (see picture). When one side is cooked, flip. Remove the omelet from the pan and place the fried rice mixture in a line down the middle of the omelet. Then take one edge of the omelet and roll the whole thing up. Use the tomato reduction from Step 2 as a garnish on top of the egg burrito.
