36 Steamed Red Date and Black Sticky Rice Cake

INGREDIENTS

  • 1 cup of black sticky rice
  • 1/2 cup of red dates, washed and sliced
  • 1/2 cup of red dates, washed and diced
  • 1/2 cup of red beans, soaked
  • 1/2 cup of oatmeal
  • A pinch of sugar
  • A dash of oil
  • A pinch of brown sugar or rock sugar
  • 4 cups of water

DIRECTIONS

Step 1
Wash the sticky rice and red beans. Place them in the bowl of the rice cooker. Add 3 cups of water to the rice cooker. Also add the diced dates, and oatmeal. After the ingredients have been cooked, leave in the rice cooker for another 30 minutes. Then add a little bit of sugar and mix well.
Step 2
Coat the inside of 3-4 small bowls with a thin layer of oil. Fill the bowls with the rice mixture from Step 1. Use your fingers to press the mixture down firmly until you have an even surface. Return the bowls to the rice cooker. Make sure to place the bowls on a basket/stand/vegetable steamer above the water and steam for 5 minutes.
Step 3
While steaming the sticky rice, place 1 cup of water, some brown sugar, and the sliced dates in a saucepan. Using low heat, stir constantly until the liquid begins to boil, thicken, and become shiny.
Step 4
Place the rice cakes from Step 2 upside down on a serving dish, remove the bowls, and pour the date sauce over the top.
