42 Chinese-Style Egg Pocket * *

INGREDIENTS

  • 1 piece of Chinese sesame bread, cut in half width-wise (can substitute pita bread)
  • 2 eggs, beaten
  • ¼ cup of spinach leaves
  • ½ cup of tomatoes, diced
  • A dash of oil
  • A pinch of salt

DIRECTIONS

Step 1
Reheat the bread.
Step 2
Heat a little oil in a pan and scramble the eggs. Then add the tomatoes, spinach, and salt. After they have cooked, take the egg mixture out and stuff each half of the bread. This is much more nutritious than making a simple egg sandwich.
