43 Nagaimo Yam and Beet Salad * * *

INGREDIENTS

  • 1/2 cup of beets, cut into thin strips
  • 1/2 cup of nagaimo yam, cut into thin strips
  • 1 cup of baby spinach leaves, washed
  • 2/3 cup of pomegranate seeds

DIRECTIONS

Step 1
Use a blender to turn 1/2 cup of pomegranate seeds into a pulp.
Step 2
Mix together the cut up nagaimo yam and beets with the pomegranate pulp. Spread this over the top of the spinach leaves. Sprinkle the other 1/3 cup of pomegranate seeds over the top and serve.
