INGREDIENTS

  • 2 cups of mushrooms, if the mushrooms are too big you can cut them in half
  • 1 cup of enoki mushrooms, rinse and remove the roots
  • 1/2 cup of carrots, cut into uniform 1” lengths
  • A dash of soy sauce
  • A dash of cooking wine
  • 1-2 tablespoons balsamic vinegar
  • A pinch of sugar
  • 1/2 cup of water
  • Pea shoots, for garnish

DIRECTIONS

Step 1
Preheat the oven to 375 °F – 400 °F.
Step 2
Mix all of the ingredients and seasonings together in an oven-safe dish. Put in the oven for 7-10 minutes. Remove from oven. Sprinkle the pea shoots on top to garnish and serve.
Step 3
A faster way to prepare this dish is to cook all of the ingredients on the stove on medium heat for 3-4 minutes and serve. Using this method the mushrooms will come out crunchier.
