50 Steamed Kabocha Squash and Millet Cake (Gluten-Free)

My mother has diabetes so all of the recipes I developed for her don’t contain simple carbohydrates. Instead I try to use oatmeal and multigrains, which helps to reduce sugars and simple carbohydrates. But it is still nutritious and satisfying.

INGREDIENTS

  • 1/2 cup of Japanese pumpkin/kabocha squash, peeled and sliced
  • 1/2 cup of yellow (broomcorn) nation
  • A few red dates
  • 1/3 cup of oatmeal
  • 2 tsp ground flax seed/flax seed meal or lotus root starch
  • A pinch of sugar; if you are making this for someone with diabetes, do not add sugar
  • 3 cups of water
  • A dash of cooking oil

DIRECTIONS

Step 1
Hold a few red dates and pumpkin slices in reserve. Wash the red dates and yellow millet in the bowl of a rice cooker. Then add 3 cups of water. Next add the oatmeal, and pumpkin slices. Cover the rice cooker and turn it on, as if you were cooking rice.
Step 2
After the millet mixture has finished cooking, stir in the ground flax seed and sugar while the millet mixture is still warm.
Step 3
Coat the inside of a small bowl with a little bit of vegetable oil. Arrange the remaining red dates and pumpkin slices around the bottom and edges of the bowl. Then fill the bowl with the yellow millet mixture and press down firmly. Put the bowl in a steamer and cook covered over high heat for 5-7 minutes and serve. If you do not own a steamer, you can put the bowl on top of a vegetable steamer in a deep covered pot.
