54 Snow Fungus Gelatin with Lotus Seed and Red Date

This dessert is just like snow fungus, lotus seed, and red date soup. Simply take any leftover soup you have and add gelatin powder. The next day it turns into gelatin. Children love to eat this dessert!

INGREDIENTS

  • 1-2 cups of snow fungus (also silver tree-ear fungus); wash, soak until soft and cut of the stems
  • 1/2 cup of lotus seeds, soaked until soft
  • 1/3 cup of red dates, soaked until soft
  • A pinch of rock or brown sugar
  • A spoonful of honey
  • 1 packet of gelatin powder (sugar-free Gelatine)
  • 6-7 cups of water

DIRECTIONS

Step 1
Put the water, snow fungus, lotus seeds, and rock sugar in a pot and cook over medium heat until ingredients become soft. Then add the red dates and cook for another 5 minutes.
Step 2
While the snow fungus soup is still hot, add the gelatin powder and stir until the powder completely dissolves.
Step 3
Pour the resulting mixture into rice bowls, distributing the solid contents evenly. After the mixture has cooled to room temperature, put the bowls in the fridge. Remove and serve when the liquid is completely firm. When serving you can drizzle a little honey over the top for an even sweeter dessert.
