56 Quesadillas with Avocado (Instead of Cheese)

INGREDIENTS

  • 2 tortillas
  • 1-2 avocados, dice and remove skin
  • 1/4 cup of corn, cooked
  • 1/4 cup of tomato, diced
  • Onion, diced and to taste
  • Orange Bell pepper, diced and to taste
  • A pinch of salt

DIRECTIONS

Step 1
Cut the avocado in half, remove the pit and dice while still in the skin. Spoon the diced avocado out of the skin and into a bowl. Using the back of a spoon, press down on the avocado until there are no more big chunks and it is paste-like in consistency.
Step 2
Add the rest of the ingredients and the salt and mix well.
Step 3
Spread the avocado mixture over half of each tortilla. Then fold the tortillas in half, lightly pressing the top half into the avocado mixture so that they stick together.
Step 4
In a pan over medium heat, cook the tortillas for a little bit on both sides until the outside of the tortilla turns a golden brown. Remove from heat and cut into wedges, starting from the center point of the folded tortillas and cutting outwards, then serve.

P.S.

The authentic Mexican quesadilla uses cheese rather than avocado. You can also add grilled diced or sliced chicken. I improved this dish by using avocados instead of cheese and chicken to make it vegetarian.
