57 French-Style Figs and Summer Vegetables * * *

INGREDIENTS

  • 1/2 cup of Brussels sprouts, washed and cut in half
  • 1/2 cup of (red) radishes, washed and cut in half
  • 1/2 cup of yellow sunburst squash or yellow summer squash, can substitute with any squash that is in season
  • 1/2 cup of figs, chopped
  • A dash of balsamic vinegar
  • A pinch of salt
  • A pinch of sugar
  • A dash of olive oil
  • A pinch of pepper
  • 1/2-2/3 cup of water

DIRECTIONS

Step 1
Blanch the Brussels sprouts in boiling water for 1-2 minutes.
Step 2
Heat some olive oil in a small saucepan over medium heat. Add the figs, half a cup of water, and the balsamic vinegar. Cook until the figs start to soften. Then add some salt and sugar and set aside.
Step 3
Heat more olive oil in a pan over medium heat and stir-fry the Brussels sprouts, red radish, and sunburst squash. When they’re cooked, add some salt. Then stir in the fig sauce from Step 2. Stir-fry for a bit until everything is heated through and evenly distributed, then sprinkle in a little pepper, and serve.
