58 Yellow Millet and Red Date Porridge (Gluten-Free)
- 1-2 cups of yellow (broomcorn) millet
- 14-21 red dates, washed and pitted
- A pinch of rock or brown sugar (brown sugar is healthier than rock sugar)
- 2-4 cups of water
|Wash the yellow millet in a medium-sized pot. Then add the water and cook the millet over medium low heat for 10 minutes. Next add the red dates. Continue to cook until the contents resemble a thick porridge or gruel. At this point you can either add sugar, or serve it and let each person add sugar to their tastes.|
Japanese pumpkin/kabocha squash makes a very tasty addition to this porridge.
