67 Carrots and Celery with Tofu Sheets * * *

INGREDIENTS

  • 1 cup of celery, sliced diagonally into 1” sections
  • 1/3 cup of carrots, thinly sliced on a diagonal
  • 1 cup of tofu sheets, fresh or dry, cut into bite-sized chunks
  • 1 Tbsp of ginger, julienned
  • 1 Tbsp of goji berries (wolfberries), rinsed
  • A pinch of salt
  • A pinch of sugar
  • A dash of sesame oil

DIRECTIONS

Step 1
Cut the fresh tofu sheets into bite-sized chunks. If you are using dried tofu sheets, soak them in water until they are soft before cutting. Blanch the pieces of tofu sheet in boiling water for 1-2 minutes. Remove and strain out the excess water.
Step 2
Mix the cut up celery, carrots, and ginger with the blanched tofu sheets. Sprinkle the salt, sugar, and sesame oil over the top and mix well. Finally sprinkle the goji berries on top, transfer to a serving dish, and serve.
