73 Nagaimo Yam and Young Ginger with Prune Sauce * *

INGREDIENTS

  • 1-2 cups of nagaimo yam, julienned to 1.5” lengths
  • 1/4-1/2 cup of young ginger, peeled and thinly sliced (or use sushi ginger)
  • 1-3 Japanese (salty) prunes, finely chopped
  • A dash of Japanese (rice) vinegar
  • A pinch of sugar

DIRECTIONS

Step 1
Peel the fresh nagaimo yam and julienne it into larger pieces of about 1.5” in length. Peel the fresh young ginger and cut it into thin slices.
Step 2
Leave the slices of ginger to pickle in some rice vinegar and sugar for a little bit.
Step 3
Finely chop the prunes. This will be your sauce.
Step 4
Mix the yam with the ginger and prunes. Transfer to a dish and serve.
