78 Red Bean, Walnut, and Nagaimo Yam Porridge

INGREDIENTS

  • 2 cups of red beans, rinsed and soaked for 3-5 hours
  • 1/2 cup of walnuts
  • 1 cup of nagiamo yam, peeled and cut into bite-sized pieces
  • 1/3 cup of black sticky rice
  • A pinch of rock or brown sugar
  • 6-8 cups of water

DIRECTIONS

Step 1
Bring the red beans and water to boil in a large pot over high heat. When the water starts to boil, cover the pot and turn the heat down to medium.
Step 2
Simmer for one hour. Then uncover the pot and add the sticky rice, walnuts, and sugar. Stir the contents of the pot then cover the lid again and continue to simmer until the red beans become soft.
Step 3
When the red beans are soft, uncover the pot again, and add the pieces of nagaimo yam. Cover the pot again, allow the porridge to simmer for 3 more minutes, then serve.
