84 Cold Cilantro, Peanut, and Dried Tofu Salad * *
INGREDIENTS
- 1-2 cups of cilantro
- 1 cup of dried tofu, diced
- 1/2-2/3 cup of roasted peanuts
- Red Bell pepper, julienned, for garnish
- A dash of soy sauce
- A dash of vinegar
- A dash of sesmae oil
- A pinch of salt
- A pinch of sugar
DIRECTIONS
Step 1 |
Blanch the dried tofu in boiling water. Remove, finely dice, and set aside. |
Step 2 |
Wash and chop the cilantro. Mix the cilantro in a large bowl with the diced dried tofu, peanuts, and the rest of the seasonings. Transfer to a serving dish, garnish with the julienned red Bell pepper, and serve. |
