86 Egg Salad in an Ice Cream Cone

This is a very convenient snack. Children particularly enjoy eating this snack while playing video games or doing their homework.

INGREDIENTS

  • 4-8 eggs, boiled and finely chopped
  • 1 Japanese cucumber, cut into thin strips
  • 1-4 cherry tomatoes
  • Mayonnaise or yogurt, to taste
  • A pinch of salt
  • 2-4 ice cream cones

DIRECTIONS

Step 1
Wash the cucumber and cut it into thin strips.
Step 2
Hard-boil the eggs and then peel and finely chop them. Put the chopped egg in a large bowl and add at least enough mayonnaise to make the egg stick together. Also add the salt and any other seasonings and mix well.
Step 3
Use an ice cream scoop to transfer the egg salad to the cone and press down gently with the scoop. Stick in a few strips of cucumber and a cherry tomato for garnish and serve.
