98 Snow Fungus, Lotus Seed, and Red Date Soup

INGREDIENTS

  • 2-3 cups of snow fungus, soaked in water for 3-4 hours
  • 1/2-1 cup of lotus seeds, soaked in water
  • 1/2 cup of red dates, rinsed and soaked in water for a bit
  • A pinch of rock or brown sugar
  • 6-8 cups of water

DIRECTIONS

Step 1
Remove the roots from the soaked snow fungus. Use your hands to tear the fungus into several large chunks and set aside.
Step 2
Put the water, snow fungus, and lotus seeds in a deep pot. Cook over high heat until the water starts to boil. Then turn the heat down to medium-low. Cover the pot and let it simmer.
Step 3
After the soup has simmered for an hour, add the sugar and red dates. Cover the pot and continue to simmer until the snow fungus is completely cooked and soft. Then serve. (If too much water evaporates while you are simmering the soup, add more water.)
