301 Stir Fried Bell Peppers with King Oyster Mushrooms and Water Bamboo in Sweet Chili Sauce

INGREDIENTS (2 servings)

  • 1 cup total of red, green, and yellow bell peppers, cut in chunks
  • 1 cup of water bamboo or bamboo shoots, cut diagonally in chunks
  • 1 cup of king oyster mushrooms, cut in chunks
  • 2-3 slices of ginger, peeled
  • A dollop of sweet chili sauce or red pepper paste
  • A dash of canola oil
  • A dash of soy sauce
  • A dash of sesame oil
  • A pinch of sugar
  • 1 Tbsp of water

DIRECTIONS

Step 1
Mix together the soy sauce, sesame oil, sugar, and water in a small bowl. Set aside. These are your seasonings.
Step 2
Heat oil in a pan. Stir fry the slices of ginger. Then add the sweet chili sauce and stir.
Step 3
Add the bamboo shoots and king oyster mushrooms and stir fry for 1 minute. Then add the bell peppers.
Step 4
Finally, stir the seasonings from Step 1 well and add them to the pan. Mix until everything has been evenly coated, remove ginger slices, then serve.
