303 Braised Squash and Nagaimo Yam

INGREDIENTS (2-4 servings)

  • 2 cups of luffa/loofah/Chinese okra, thickly sliced on a diagonal
  • 1 cup of nagaimo yam, coarsely chopped
  • 1/3 cup of carrots, sliced
  • 2-3 dried shiitake mushrooms, cut in half (soak in water until soft, drain and remove stems before cutting)
  • 2-3 slices of ginger
  • A dash of canola oil
  • A pinch of salt
  • A dash of water
  • A bit of cornstarch or corn flour mixed with a 1/2 cup of water

DIRECTIONS

Step 1
Heat the oil in a pot and stir fry the ginger. Then add the shiitake mushrooms and carrot and stir fry.
Step 2
Next add the luffa/squash, nagaimo yam, and salt. Stir fry these together then add a little bit of water. Finally, add the cornstarch and water mixture. Stir cornstarch mixture in evenly and then serve.
