304 Stir Fried Bell Pepper with Ginkgo Nuts and Lotus Root

INGREDIENTS (2-4 servings)

  • 1 cup of red bell peppers, coarsely chopped
  • 1/3 cup of ginkgo nuts
  • 1 cup of lotus root, sliced
  • 1/2 cup of celery, sliced on a diagonal
  • 1/3 cup of carrot, sliced on a diagonal
  • A dash of canola oil
  • A pinch of salt
  • A dash of water

DIRECTIONS

Step 1
Heat oil in a pan and stir fry the carrots.
Step 2
Then add the lotus root, ginkgo nuts, water, and salt. Stir and let cook for 1 minute. Add the bell pepper and celery last. Stir fry until everything is cooked through and serve.
