305 Stir Fried Cucumber, Carrots, and Bamboo Shoots

INGREDIENTS (2-4 servings)

  • 1 cup of bamboo shoots, cut on a diagonal
  • 1 cup of carrot, cut on a diagonal
  • 1 cup of (Japanese) cucumber, cut into wedges
  • 1/3 cup of granola or fried crispy soy bean crumbs
  • A dash of canola oil
  • A dash of low-sodium soy sauce
  • A pinch of salt

DIRECTIONS

Step 1
Heat oil in a pan and stir fry the bamboo shoots, carrot, and cucumber.
Step 2
Then add the soy bean crumbs or granola. Finally stir in the soy sauce and salt. When everything is evenly mixed, serve.
