309 Stir Fried Dried Tofu, Mushrooms, and String Beans with Goji Berries

INGREDIENTS (1-2 servings)

  • 1 cup of dried tofu, cut into strips
  • 1 cup of string beans, cut into sections about the same size as the dried tofu strips
  • 1/2 cup of dried shitake mushrooms, thinly sliced (soak in water until soft, drain and remove stems before cutting)
  • A little ginger, julienned
  • Some goji berries (wolfberries), soak in water and drain
  • A dash of canola oil
  • A dash of low-sodium soy sauce
  • A pinch of salt

DIRECTIONS

Step 1
Heat oil in a pan and stir fry the julienned ginger, shiitake mushrooms, and string beans together for 1 minute.
Step 2
Then add the dried tofu and stir to evenly distribute. Finally add the low-sodium soy sauce, salt, and goji berries. After everything is mixed together well, serve.
