310 Stir Fried Pickled Mustard Green with Bai-Yei and Edamame

INGREDIENTS (2-4 servings)

  • 1 cup of edamame, boiled for 3-5 minutes and drained
  • 2 cups of pickled mustard greens, coarsely diced
  • 2-3 pieces of bai-yei (thick bean curd sheets), cut into thick strips
  • 1 tsp of potassium carbonate solution/lye water OR 1/2 tsp of baking soda
  • 3 cups of water
  • A dash of canola oil
  • A pinch of salt
  • A pinch of sugar

DIRECTIONS

Step 1
Add either 1 tsp of potassium carbonate solution or 1/2 tsp of baking soda to 3 cups of water in a medium bowl.
Step 2
Add the bai-yei to the water mixture from Step 1 and soak for 5-8 minutes. Then remove the bai-yei and rinse thoroughly with cold water. Drain the bai-yei and set aside.
Step 3
Heat oil in a pan and stir fry the pickled mustard greens. Then add the edamame and continue to stir fry.
Step 4
Next add the bai-yei, and stirring, allow to cook for 1 minute. Finally stir in the salt and sugar, then serve.
