314 Braised Summer Squash with Black Fungus

INGREDIENTS (4 servings)

  • 3 cups of summer squash (can substitute luffa or cucumber), cut into 2” strips
  • 1 cup of black fungus, cut into large chunks (soak in water until soft, drain and remove stems before cutting)
  • A little bit of ginger, julienned
  • 1 cup of water
  • A dash of cooking oil
  • A pinch of salt
  • A pinch of sugar

DIRECTIONS

Step 1
Heat oil in a pan and stir fry the ginger and black fungus first. Then add the water, put on the lid, bring the water to a boil and cook for 1-2 minutes.
Step 2
Next add the summer squash, salt, and sugar. Stir everything together until it’s evenly distributed, then let it cook for another minute. Remove from heat and let it cool a little before serving.
