315 Sautéed Potatoes, Beets, and Carrots with Tomato

INGREDIENTS (4 servings)

  • 1 cup of cucumber or celery, cut into thick strips
  • 1 cup of potatoes, cut into small chunks
  • 1/2 cup of tomatoes, cut into small chunks
  • 1/2 cup of carrots, cut into thick strips
  • 1 cup of beets, cut into small chunks
  • A dash of cooking oil
  • A pinch of salt
  • A pinch of black pepper
  • 1-1/2 cups of water

DIRECTIONS

Step 1
Heat oil in a pan and stir fry the potatoes and carrots. Then add 1 cup of water, cover, bring the water to a boil, and simmer for 1 minute.
Step 2
Then add the tomatoes, beets, and cucumber or celery. Stir until everything is evenly distributed, then stir in the salt and add the other 1/2 cup of water. Cover the pan again and simmer for another minute. Finally add the black pepper, and serve.
