317 Eggplant with Hot Pepper and Basil

INGREDIENTS (2-4 servings)

  • 3 Chinese eggplants, thickly sliced on a diagonal
  • 3 (or to taste) chili peppers or red peppers, thinly sliced
  • A large pinch of fresh basil
  • A few thin slices of ginger
  • A dash of soy sauce
  • A dash of rice wine
  • A pinch of sugar
  • 1/3-1/2 cup of cooking oil

DIRECTIONS

Step 1
Mix together the soy sauce, rice wine, and sugar in a small bowl. Set the seasoning aside.
Step 2
Heat all of the oil in a deep pan and stir fry the ginger. Then add the Chinese eggplant and evenly coat the eggplant in the hot oil.
Step 3
Next add the chili peppers and the seasonings from Step 1. Mix everything together. Finally add the basil. Serve after incorporating the basil.
