326 Mushrooms and Mixed Vegetables Over Fried Rice

INGREDIENTS (1-2 servings)

  • 1 cup total of red, green, and yellow Bell peppers; coarsely chopped
  • 1/2 cup of mushrooms, chopped
  • 1/2 cup of onions, diced
  • 1/2 cup of broccoli; cut into bite-sized pieces, blanched, and drained
  • 1/4 cup of gingko nuts, blanched and drained
  • 2-4 cups of cooked white rice
  • A dash of cooking oil
  • A dash of ketchup
  • A pinch of salt
  • A pinch of white pepper

DIRECTIONS

Step 1
Heat oil in a large pan. Stir fry the rice with the ketchup until the ketchup has been evenly distributed. Remove from the pan and set aside.
Step 2
Heat more oil in the pan and stir fry the onions, peppers, mushrooms, broccoli, and gingko nuts. When the onions are translucent and the broccoli has become soft add the salt and white pepper.
Step 3
Put the fried rice on a serving dish. Spread the cooked vegetables over the top and serve.
