327 Sweet Potato and Beets Salad with Pumpkin Dressing

INGREDIENTS (2-4 servings)

  • 2 cups of sweet potatoes; steamed, peeled, and coarsely chopped
  • 1 cup of beets; steamed, peeled, and cut into sections
  • 1/2 cup of carrots, thinly sliced
  • 5-6 tomatoes (you could blanch these to remove the skin – optional)
  • 2 cups of mixed salad greens
  • 2/3 cup of pumpkin (peeled and diced)
  • 2 Tbsps of olive oil
  • 1.5 cups of water
  • A pinch of pepper
  • A pinch of salt

DIRECTIONS

Step 1
Bring 1.5 cups of water to boil in a small pot. Boil the pieces of pumpkin until they are completely cooked and soft. Then place the contents of the pot in a blender. Blend until contents are the consistency of pumpkin juice.
Step 2
Add the olive oil, salt, and pepper to the pumpkin juice and mix together. This is your pumpkin dressing.
Step 3
In a salad bowl, mix together the rest of the ingredients. Sprinkle with the pumpkin dressing and serve.
