329 Baked Tomato with Mushroom and Cheese Stuffing

INGREDIENTS (2 servings)

  • 2 tomatoes
  • 1 cup of mushrooms, finely chopped
  • 1/4 of peas, blanched and drained
  • 1 cup of mozzarella cheese or other white cheese, shredded
  • 2 pods of okra, blanched and drained
  • A pinch of salt
  • A pinch of pepper

DIRECTIONS

Step 1
Slice off the tops of the tomatoes, remove the pulp, and set aside.
Step 2
In a bowl, mix together the mushrooms, peas, cheese, salt, and pepper. Stuff the tomatoes with the resulting mixture.
Step 3
Preheat the oven to 250°. Put the tomatoes on a baking tray and place in the oven for 20-30 minutes. After taking the tray out, transfer the tomatoes to a serving plate. Place a pod of okra on top of each tomato and serve.
