331 Nagaimo Yam with Roselle Sauce

331 Nagaimo Yam with Roselle Sauce

INGREDIENTS (2-4 servings)

  • 2-3 cups of nagaimo yam, cut into long thick strips
  • 1 cup of Roselle buds, chopped (if using the dried buds, soak in water until they start to spread out and drain before using)
  • 3 Tbsp of rock sugar, can substitute brown sugar
  • 1-2 cups of water

DIRECTIONS

Step 1
In a small saucepan, add the water, Roselle buds, and rock sugar. Simmer over low heat, stirring continuously, until the rock sugar completely dissolves.  Continue to stir until the sauce begins to thicken. Then turn off the heat and allow the sauce to cool.
Step 2
Place the nagaimo yam on a serving dish. Pour the Roselle sauce over the top and serve.
