333 Thai Style Taro, Mushroom, and Mixed Veggie Hot Pot

333 Thai Style Taro, Mushroom, and Mixed Veggie Hot Pot

INGREDIENTS (2-4 servings)

  • 4-5 cups of taro, peeled and cut into bite-sized pieces
  • 1 cup of mushrooms, halved
  • 1/2 cup of baby corn, halved lengthwise
  • 1/2 cup of carrots, cut into bite-sized pieces
  • 1/2 cup of broccoli, cut into bite-sized pieces, blanched, and drained
  • 1/4 cup of onion, finely diced
  • 1.5 cups of water
  • A dash of cooking oil
  • A pinch of salt

Seasonings

  • 1 Tbsp of flour (sifted)
  • 1/2 cup of milk
  • 1/2 cup of water
  • A pinch of salt
  • A pinch of pepper

DIRECTIONS

Step 1
In a small saucepan over low heat combine the 1/2 cup of water, milk, flour, pepper, and salt. Stir constantly until the seasonings become thick, then turn off the heat and set aside.
Step 2
Heat oil in a pan and stir fry the onion. Then add the taro and continue to stir fry. Next add the carrot and 1.5 cups of water. Cover the pan and turn the heat down to low. Allow contents to simmer for 10 minutes.
Step 3
Remove the lid and add the baby corn, mushrooms and salt. Stir everything together and let cook for 1 minute. Then add the broccoli. Finally, stir in the seasonings and serve.
