335 Kung Pao Mixed Vegetables with Cashews

INGREDIENTS (4 servings)

  • 1 cup total of red and green Bell peppers, cut into bite-sized chunks
  • 1 cup of baby corn
  • 1/2 cup of Chinese celery, cut into short lengths
  • 1 cup of enoki mushrooms
  • 1 cup of konnyaku (yam cake), cut into bite-sized chunks
  • A pinch of fresh basil
  • A few chili peppers, thinly sliced
  • A dash of cooking oil
  • A dash of soy sauce
  • A pinch of salt
  • A pinch of sugar
  • A dash of rice wine
  • 1/2 cup of cashews

DIRECTIONS

Step 1
Heat oil in a pan and stir fry the chili pepper, Bell pepper, baby corn, Chinese celery, konnyaku, and enoki mushrooms.
Step 2
Add the soy sauce, salt, sugar, basil, rice wine, and cashews. Stir fry until everything has been thoroughly cooked and mixed together and serve.
