338 Cold Black Fungus with Ginger and Goji Berries

INGREDIENTS (2-4 servings)

  • 2-3 cups of black fungus; soak in water until soft, remove the stems, cut into large pieces, and drain before using
  • A little bit of ginger, julienned
  • A small handful of goji berries, soak in water until soft and drain before using
  • A sprinkle of white sesame seeds
  • A pinch of salt
  • A pinch of sugar
  • A dash of low-sodium soy sauce
  • A dash of sesame oil
  • 4-6 cups of water

DIRECTIONS

Step 1
Boil the soaked black fungus with 4-6 cups of water in a small pot until it’s flexible. Remove from the water, drain, and set aside.
Step 2
Place the drained black fungus in a large bowl. Add the ginger and goji berries and mix. Next add the salt, sugar, soy sauce, and sesame oil. Stir everything together and finally sprinkle the sesame seeds over the top before serving.
