340 Sautéed King Oyster Mushrooms with Baby Corn and Basil

INGREDIENTS (4 servings)

  • 2 cups of king oyster mushrooms, coarsely chopped
  • 1/2 cup of dried shiitake mushrooms, soak in water until soft and drain before using
  • 1 cup of baby corn, cut in half
  • A few slices of ginger
  • 1/3 cup of Chinese celery, coarsely chopped
  • 1/2 cup of basil
  • A dash of soy sauce
  • A dash of rice wine
  • A pinch of sugar
  • A pinch of salt
  • 1/4 cup of water

DIRECTIONS

Step 1
In a small bowl combine the soy sauce, rice wine, sugar, and salt. Set aside. These are your seasonings.
Step 2
Heat oil in a pan and stir fry the ginger and shiitake mushrooms. Then add the king oyster mushrooms, baby corn, and Chinese celery.
Step 3
When the mushrooms have cooked down a little bit, add the seasonings from Step 1 and the water. Continue to cook until most of the water has cooked off. Finally, stir in the basil and serve.
