341 Braised Squash, Bamboo Shoots, and Enoki Mushrooms

INGREDIENTS (4 servings)

  • 3 cups of luffa squash, cut on a diagonal into large chunks
  • 1 cup of enoki mushrooms
  • 1/3 cup of shiitake mushrooms, shredded
  • 1/3 cup of bamboo shoots, julienned
  • A little bit of imitation seafood or vegetarian ham, julienned
  • A little bit of ginger, julienned
  • A bit of cornstarch or corn flour mixed with a 1/2 cup of water
  • A dash of cooking oil
  • A pinch of salt
  • A pinch of white pepper (optional)
  • A dash of sesame oil
  • 1/2 cup of water

DIRECTIONS

Step 1
Heat oil in a pan and stir fry the ginger, shiitake mushrooms, and luffa.
Step 2
Then add the bamboo shoots, water and enoki mushrooms, and cook for 1 minute.
Step 3
Finally, add the salt, fake meat, cornstarch mixture, sesame oil, and white pepper. Stir until everything is completely mixed and serve.
