343 Braised Water Bamboo with Bai-Yei and Celery

INGREDIENTS (4 servings)

  • 1 cup of water bamboo, sliced
  • 2 cups of bai-yei (thick bean curd sheets), cut into large chunks
  • 1 tsp of potassium carbonate solution/lye water OR 1/2 tsp of baking soda
  • 3 cups of water
  • 1/2 cup of Chines celery, cut to short lengths
  • A dash of cooking oil
  • A dash of low-sodium soy sauce
  • A pinch of salt
  • A pinch of sugar

DIRECTIONS

Step 1
Add either 1 tsp of potassium carbonate solution or 1/2 tsp of baking soda to 3 cups of water in a medium bowl.
Step 2
Add the bai-yei to the water mixture from Step 1 and soak for 5-8 minutes. Then remove the bai-yei and rinse thoroughly with cold water. Drain the bai-yei and set aside.
Step 3
Heat oil in a pan and stir fry the water bamboo. Next stir in the bai-yei. Then add the low-sodium soy sauce, salt, sugar and a little water. Mix together then allow to cook for 1-2 minutes until the bai-yei becomes flexible.
Step 4
Finally stir in the Chinese celery and serve.
